Hi Folks!

I hope that after the Christmas madness at the table, you left a bit space in your stomach for New Year’s Eve because today I would like to present you and absolute favourite which conquers the Italian parties in this special night ;). Why is it so important to eat it and what  symbolism is hidden behind today’s dish? Let’s take a look J.

  

Cotechino e lenticchie, because we are speaking of this food, is a traditional Italian dish prepared only for the New Year’s Eve. As you can note on the above photo, cotechino is a fresh pork sausage, which is characterized by very creamy and delicate flavour. It will be great to find the one of the good quality because then it’s enough to add a little bit of pepper, nutmeg and cloves to enjoy its unique taste. However, the Italians love combining this kind of meat with lentils (previously mentioned lenticchie J) and with good reason! The whole becomes not only more exquisite, but also brings a fortune in the coming year. In fact, the Italians believe that due to a round shape of lentils, that remind coins, they will provide us an abundance, similarly like cotechino, considered in the past fat meat and intended only for the richest citizens. Fortunately, times have changed and nowadays more people can afford this small amount of luxury J.
